Southern Living's Six O'Clock Solutions


The sweet people at Southern Living Magazine sent me this fabulous cookbook "Six o'Clock Solutions."  I don't know about y'all, but I constantly run out of interesting dishes to prepare for my husband.  I would eat fish, brown rice, and a vegetable every single night of my life...but the only seafood my husband likes is shrimp.  I'm always trying to come up with something other than the same ole' grilled shrimp, grilled chicken, grilled pork chops, turkey meatloaf, etc.  I found some alternatives to try in this Southern Living cookbook.


The Quick Chicken Piccata dish on page 99 only takes 30 minutes and since my husband likes chicken,  I'll definitely be trying this one!

I really want to try the recipe for the Fried Green Tomato Sliders (page 72) and the Slaw Reubens (page 65).  I call these "Treat Day Specials!"


Southern Living's Shrimp Destin Linguine (page 40) has always been one of my favorites as well as the Pecan Crusted Chicken and Tortellini (page 34).


The recipe for Fettuccine and Asparagus al Burro caught my eye for tonight...I love pasta, I love asparagus, and I love cheese.  Happy Happy!



We had a long day with my husband ending up in the emergency room.  Lord have mercy, not sure yet if he has a torn rotator cuff.  Ouch!  Our "Six o'Clock Solution" meal wasn't eaten until after 9pm.  The dish was delish!

With sweet tea....

My husband was in no mood for anything different and wanted grilled shrimp with his pasta...no change for him.

Oh my! Praying he does not have a torn rotator cuff, and he continues to improve. I know it is so very painful.

Oh, my!! I hope your husband enjoys a speedy recovery, and that his nurse is able to remain in good humor. Those dishes look delicious!

Oh no! I tore my rotator cuff about 8 yrs ago(fell in a pond while gardening,don't ask). I did need surgery which was not fun at all, but you do eventually recover, better than ever. Poor guy

I'm sorry to hear about your husband's shoulder. I'm sure he's in good hands and you will make the right decisions. I'll say a prayer, as my mother always said 'God listens to the prayers of sinners first', as she was asking me to say a prayer for something.

Ouch! ...hope he will mend quickly...has anyone mentioned surgery? Hubs has bursitis in one shoulder and a torn muscle in the other. I am recuperating from a collapsed lung so we can sympathize with y'all. Take care of yourself, too.

That book looks wonderful, but what on earth is a "slider"? A type of sandwich?

I hope your hubs is better soon. I know all about shoulder problems.

I may use the exact recipe but more often the picutres inspire me to come up with my own twist.

Yes Ali, a slider is a small sandwich, which kind of makes us think we're not eating as much:). He's still waiting to find out exactly what it is:(
